In ancient Greece, the cult of ambrosia, the ‘divine food’, led to a strong interest in the behavior of bees. Writers such as Homer (who recounted the harvesting of wild honey), Pythagoras (who considered honey an elixir of life) and Aristotle (who minutely described the behavior of bees) wrote about honey and beekeeping.
More than 100 different plant species participate in the final composition of Greek honey in a small or large percentage. Because of this, Greek honeys are recognized as having more comprehensive biological properties than honeys from other countries.

Thyme honey is considered to be an excellent quality honey.
This honey is not particularly sweet and offers a rich aroma.
It has a non-translucent, matte amber color.
It has a viscous texture with a low percentage of moisture.

Nutritional value: Thyme honey contains high traces of elements such as calcium and magnesium. With a high antioxidant capacity, meaning that it protects our cells from the damage caused by free radicals.

Honey cream with lavender and flower honey is a combination of flower honeys through the process of controlled crystallization. Crystallization is a natural evolution of a flower honey. By mixing crystalline honey with honey in “normal” (liquid) state, we break up the large crystals that form in the crystalline honey and its texture becomes creamy and soft.
It is a natural process and does not set endangering the quality of honey.

Organoleptic Characteristics:
It has a velvety texture, with aromatic notes of wild flowers and lavender as well great flavor. Children also like it because it spreads beautifully on bread, biscuits or croissants and gives them the benefits of honey straight from the hive.

It is from this majestic tree that our Oak honey is collected.
Oak honey is made from honeydew honey, meaning that it is produced by the secretions of honeybees living in the bark of the tree.
It is characterized as honey of high nutritional value.

Organoleptic Characteristics: A dark honey, almost as black as molasses, it provides a particularly rich taste with a light aroma.
It has a gentle and velvety, thick texture.
It is rich in antioxidant properties and contains large amounts of potassium, magnesium, phosphorus, iron and sodium.

GREEN HONEY

In the protected (NATURA 2000 treaty) forests of the Rhodope Mountains, and in the virgin forest of Fraktos, honey is collected from Oak forests and native flowers.
It is produced in an environmentally friendly way.

Organoleptic Characteristics:
It is dark, almost black honey, without strong aroma with particular rich taste. Its texture is soft and relatively thick. It is rich in antioxidant properties and contains in large quantities potassium, magnesium, phosphorus, iron and sodium.

Chestnut honey is of mixed origin, derived from the nectar of chestnut flowers and honeydew secretions. Scientifically, however, it is classified as a flower honey.
It is unique for its properties of remarkable therapeutic value.
It is probably the richest in trace elements such as potassium, magnesium, manganese as well as fructose and tannins thanks to the chestnut trees from the protected forests (NATURA 2000 Treaty) of the Rhodope Mountains.

Organoleptic Characteristics:
In terms of color, this varies depending on the place of origin, from a sun-warmed gold to dark brown and even black.
It has a strong, fragrant aroma and a moderate to strong, bitter taste.
Its texture is gentle, glossy and relatively fluid.

The color of Thyme honey is light amber to amber when liquid.
References to honey in Greece are over two thousand years old.

Organoleptic Characteristics:

Our Hazelnut Honey is a secret delight of ‘Grandpa’s magic recipe’.
We melt a soft hazelnut cream with our honey.
This combination, without any other additives, produces an exceptionally healthy honey, ideal for children, athletes, and adults.

Organoleptic Characteristics: Honey with hazelnut paste.
A dark honey with a strong aroma and an intense praline taste, it has a smooth and relatively thick texture.
It contains proteins and carbohydrates, Vitamin B-Complex as well as traceable elements of potassium, magnesium, phosphorus.

FIR HONEY

EXCELLENT HONEY FROM MOUNTAINS OF GREECE

FIR honey

Fir honey is produced in northern Euboea. It accounts for 65% of the total honey produced in Greece.

Flavor: Due to the low sugar concentration, it is not too sweet.

Nutritional Value: Fir-tree is considered to be a honey of high nutritional value, wich is indicative of its high ash rate. Among these substances are minerals and trace elements (calcium,magnesium, zinc, iron, copper, etc.), which are in high concentrations in Greek pine nuts.

Perfume: Particular. Some like it with the iodine scent.

Colour: The colour of the fir honey is characteristic and darker than the thyme. Even that produced in the spring is lighter and clearer than the one produced in the autumn.

Crystallization: Crystallization of the fir honey occurs at a fairly slow rate, since its natural glucose content is low.
More specifically, pure pine nuts remain fluid, that is, without crystallizing, for more than a year and a half.

Produced from the nectar of flowers, it contains pollen from many plants in varying proportions. Their physico-chemical and therapeutic properties, as well as their colour, vary according to the nectar of the plants the bees carry in the hive.

Taste: Midlly sweet, multi-layered flavor due to the variety of flowers.

Nutritional Value: Aids digestive function, gives energy and endurance, regulates intestinal function, improves liver fonction, helps the children to develop properly.

BIO FOREST HONEY

Central Rhodopes, which, in 1980, being one of the few virgin European forests, was declared a protected Natural Monument, due to its high ecological value, as its evolution has only followed nature’s rules and has not been influenced by human activity.
The organic honey from this virgin forest is collected at an altitude of 1100-1400 metres and is unique. In fact, the bees that produce this honey feed on a wide variety of wild flowers, herbs and spruce honeydew found in this forest, which give the honey a rich, complex flavour and a completely distinctive aroma unlike any other honey on the market.

MARRUCA HONEY

MARUCA honey

Almost all of us are familiar with the appearance, consistency and organoleptic characteristics of the famous honeys: millefiori, acacia etc…. but only a few have tasted this rather unknown honey, which is derived from the flowering of an equally unknown plant: the marruca (Paliurus Spina Christi). This is a thorny shrub, very common especially in parts of Greece, which flowers in May and
June. Its small yellow flowers in autumn turn into bizarre, brown, dry fruits with a very leathery appearance. The branches of this plant are particularly thorny and, especially in the past, were used as fences around pastures.
The single-flower honey from this plant has an amber-red colour and a vaguely caramel flavour with a slightly sour aftertaste. The crystallisation is medium and it is said to be particularly suitable as an anti-inflammatory for the stomach.
At the table it goes well with typical sheep’s milk cheeses and blue cheeses.

CITRUS FLOWER HONEY

Citrus Flower Honey honey is produced in the Messinian Mani, Laconia, an important source of nectar honey.
It is a honey that is much aimated by children because of its very sweet and aromatic flavor.

Taste: A very particular flavor.

Nutritional value: This honey is rich in vitamin C. Its anxiolytic and soothing properties are also nutritious and rich in trace elements.
To preserve the nutritional value of this type of honey, it should be consumed within a short period of time and protected from high temperatures.

Scent: Bright and wonderful scent.

Crystallization: It crystallizes very quickly, so it is good to consume it in a short period of time.

BIO HERICA HONEY ANDROS

Herica honey is produced on the slopes of Andros.

Herica is an excellent plant to produce honey because it has certain unique qualities that are good for human health. These qualities come naturally to honey and that’s why, in recent years, its popularity has been growing and more and more people are using it.

Taste: It has a characteristic taste, full of flavor with aromatic notes of caramel, intense earthy aroma of flowers of the Reiki plant.

Nutritional value: It has a high biological and nutritional value due mainly to minerals, proteins, amino acids, enzymes, and vitamins of the B complex. Hare honey has a particularly high protein content (2%) compared to other honey varieties. It also has antiseptic and diuretic properties.

Crystallization: Due to its high glucose content it crystallizes very quickly (1-3 months).

Greek sage honey is a niche product, a rare and sought-after honey, with a transparent yellow colour and a very delicate and fragrant flavour. It is produced on the slopes of the Taygetos Mountains, in areas rich in endemic and aromatic plants and is famous for its aromas and taste.
Sage honey does not have the spicy scent of the sage plant that is used extensively in cooking and whose characteristic scent comes from the essential oil found in the leaf of the plant as honey is produced from nectar.
Greek sage honey has a high nutritional value, is beneficial for the respiratory system and goes well with yoghurt, bread and butter or fruit.

THISTLE HONEY
From the flowers of the thistle, which blossoms in early summer, a highly sought-after honey is obtained, with a marked and persistent perfume and aroma, of medium intensity, similar to cut bark with floral-fruity notes. The flavour is strong and characteristic, sweet, acidic and at the same time slightly bitter; reminiscent of cinnamon with a slight presence of nutmeg. It is generally hazelnut-amber in colour with orange tones when crystallised and green hues when liquid. Due to its digestive qualities, thistle honey helps to alleviate the feeling of tiredness and malaise we get when we overeat.

LINDEN HONEY
Linden Honey has a clear, amber colour and a strong, chemical, almost medicinal bouquet, with a clear reference to the aroma of the flower, followed by the scent of incense and resin. In the mouth it is refreshing, of menthol, sage and lime, with strong aromatic persistence balanced in the finish between citrus and bitter. Lime honey owes its aroma to the complexity of 100 different volatile aromatic substances.
This blend of honeys goes well with all meat preparations and to accompany savoury, medium-aged cheeses.

ACACIA HONEY
Acacia shrubs (Robinia pseudoacacia L.), also known as locust trees, have white, sometimes pink, flowers in hanging clusters that bloom from late May to early June.
They are fragrant and provide bees with fragrant nectar, which the bees process into honey of excellent quality. Liquid acacia honey is light in colour and its aroma is delicate and smooth, with a very sweet flavour.

PALIURUS HONEY
Pallium honey is a rare variety due to the short flowering period and the location where this herb flowers. Pallium is a hardy native shrub that can grow up to 3 metres in height.
The flowering period is about three weeks. The flowering period is interrupted by adverse weather conditions, such as rain and wind, which make this honey particularly rare.
It has a light orange colour, a very fragrant aroma with caramel notes and a delicate taste that is also ideal for pairing with cheeses such as pecorino or blue cheese.
This blend of honeys has undoubtedly detoxifying effects on the liver, is useful for counteracting stomach acidity and promoting intestinal balance. Like all honey, it is a powerful antibacterial and is very useful for soothing coughs and sore throats.

EUCALYPTUS HONEY

EUKALIPTUS HONEY

The flavour is strong, intense and particularly balsamic: for some it is reminiscent of mushrooms, wood and curry, while others taste of helichrysum and liquorice candies.
The taste, however, is not too sweet and the acidity is also moderate. The consistency of this honey is firm and the colour is amber.
It is interesting to know that the eucalyptus honey from Europe, and in particular that produced in
Greece, is considered the best of the eucalyptus honeys due to the presence of more flavonoids and more propolis, which increases its antioxidant power.
The presence of propolis thus also adds to the honey’s antiviral and antibacterial properties that favour the use of eucalyptus honey against all external attacks caused by viruses or bacteria, mainly to the benefit of the respiratory system.
This honey is also excellent in plain white yoghurt, dissolved in drinks that are not too hot; the best combination is with strong teas with cinnamon or ginger, which are also excellent in cases of colds.
In gastronomy, eucalyptus honey is often associated with mature and tasty cheeses such as grana and parmesan or with low-fat cheeses, but it is also perfect with first and second courses of fish and mixed vegetables simply dressed with oil, lemon and eucalyptus honey.

BEE PROPOLIS TINCTURE

The beneficial properties of propolis tincture:
Strong antibiotic action.
Antifungal activity.
Antioxidant action.
Protects vitamin C from oxidation, exhibits suppressive and sometimes toxic action against cancer cells, stimulates the regeneration of healthy tissues.
It has analgesic action of the injured muscular system, it has antihistamine effect.

Inside: 20-30 drops total (children up to 10) total, mixed with half a glass of water or milk, half an hour before eating, up to three times a day and usually for one month.
The solution due to alcohol causes temporary burning, but soon the beneficial effect of propolis relieves.

WARNING: Propolis until it is dry on the skin does not come into contact with clothing.
