Oleaginous nuts have rightfully become part of the list of so-called ‘SMART FOODS’ of the SmartFood programme, a research project promoted by the IEO (European Institute of Oncology) that deals with the correct scientific disclosure of protective factors in the diet and promotes research on ‘foods that contain molecules capable of activating longevity genes and slowing down the ageing process and related diseases, evaluating their effectiveness through clinical studies’.Thanks to their content of important nutrients, including unsaturated fats, plant proteins, fibres, minerals, vitamins and compounds with antioxidant action, dried oleosas are now an integral part of the diet of all those interested in following a healthy diet.
A peculiar characteristic of these creams is the separation of the oily part contained in the dried fruit from the pasty part: after a few days of ‘resting’, in fact, inside the jar, it is possible to observe a separation between the oily and the solid phase.
There is no need to worry because this phenomenon is perfectly natural and is proof that there are no thickeners or emulsifiers inside the product that would block the separation.
To solve the problem, simply stir the product for a few seconds and you will again have a soft, silky cream.
